My favorite holiday

Every Year my family makes Pumpkin Cheesecake Pie on thanksgiving. This has been our family tradition every year since I was a kid. Back in the day my family would use a handheld mixer. Today they use a Hamilton Beach® Mixer. Some of the ingredients are graham cracker crust, cream cheese, granulated sugar, eggs, canned pumpkin pie filling, cinnamon, nutmeg and vanilla. This recipe is special to me because it reminds me of my childhood and the good times I had growing up.

Here is the instructions on how to make it.

Preheat the oven to 350 degrees, with the rack in the center position.

2. Place the cream cheese and sugar in a mixing bowl or in the work bowl of a food processor fitted with the metal blade. Process or use a Hamilton Beach® Stand Mixer to blend the two ingredients until they are smooth. Add the eggs, pumpkin pie filling, cinnamon, nutmeg and vanilla, and mix or process until smooth. If you are using the mixer, take care not to beat too much air into the batter, as this will cause it to rise during baking and then fall and crack when it cools.

3. Pour the mixture into the crust, and bake the pie for 30 minutes or until the top looks dry, with only a small damp spot remaining in the center. Cool completely before serving, refrigerating or freezing. Makes 8 servings. Using the Eclectrics® Mixer just makes a huge difference in the speed of preparing it with less work.
